Thoughts on Banana Bread (and more below)


Flashback to April 2021. You are sitting in your living room. Nothing to do. Nothing to talk about.

You pick up your phone. Scroll, scroll, scroll. Sourdough. Muffins. Family walks.

Banana Bread.

Dubbed the “Official Comfort Food of Quarantine”, Banana bread was our life’s blood. It held us together and gave us something to do. Some to be. Yes I’m a bit dramatic.

But what place does banana bread have in 2021? Is time to retire the beautiful loaf of the moistest baked good? And what if it has chocolate chips on top? Does it still have to go?

The truth is… where there are overripe bananas, there should be banana bread. And if you have chocolate chips? Chocolate chip banana bread.

It could be too painful to make right now. We aren’t quite post-pandemic, but things are shifting.

So I tried Half Baked Harvest’s Chocolate Chip Almond Butter Banana Bread for you, a twist on a classic. Since everythings a bit weird right now, its time to bring in a weirder banana bread. This one taste slightly less…

Distanced? Isolated?

Of course, it’s a half baked harvest recipe.

Half Baked Harvest’s Chocolate Chip Almond Butter Banana Bread

Tieghan Gerard can do no wrong. I’ve made plenty of Half Baked Harvest’s recipes and this banana bread still impressed me.

Modifications: I didn’t do the almond butter but used peanut butter for a similar taste.

Best for: Breakfast. Not overly sweet but the chocolate makes it decadent. It’s moist, but doesn’t have that gooey banana middle. I rarely can cook a banana bread through without burnt edges. It still feels light despite the dessert qualities (PB and Chocolate)

Negatives: Almost not sweet enough? But I can chalk that up to not using *perfectly* ripe banana’s.

Banana bread is an example of what stays in 2020? What comes with us to 2021? Please. Let’s not forget about banana bread. Or family walks. Or days off.

  • The Everygirl posted this article about top cheeses from Trader Joe’s. I’ve been seeing alot of charqueterie picnics this year which could be a cute mother’s day idea
  • Heard a couple new songs last week that kinda gave me butterflies (ew). I put them together with some old songs for a not-so-sappy love song playlist. But it could just be sappy.
  • I realized this week college stamps creativity out of me. So hopefully I’ll be on the blog a little more or playing music a little bit more. I think creativite outlets keep me mentally sane. Too much focus on school kinda kills me a bit. Maybe I’ll cook some more banana bread this week.
